Colcannon: an Irish Halloween Tradition

...I'm feeling all "Erin Go Brag" and whatnot...

“1# kale, 1/2 pt water, 1 Tbsp veg. oil, 1 1/2# potatoes (peeled and quartered), 1 med carrot (chunked), 1 Tbsp chopped parsely, 1 med chopped onion, 1 c milk, salt and pepper to taste, 2 oz melted butter.

simmer the kale in water and oil for 10 minutes

drain thoroughly and chop finely

boil potatoes and carrots until tender, then mash together

cook onion and milk together in a different pot that you used for the potatoes

add onion and milk mixture to to kale, potatoes and carrots

season with salt and pepper

top with melted butter and chopped parsely”
