I didn’t start these cookies until after 2230 (that’s 1030pm), but the recipe was so easy, even my foggy consciousness didn’t mess it up. I adapted it from the Quaker oats recipe, changing the spices, the amount of salt, and adding dried cherries, white chocolate chips, and dark chocolate chips instead of the raisins (eeewww….) that colonial looking dude on the package suggested.
…what’s with that guy, anyway?…
Quick Oatmeal Cookies
the stuff you’ll need: cookie sheets; non-stick spray or a silicone mat or parchment paper; scooper (or two spoons…); heavy duty mixer; cooling racks; flat spatula; rubber spatula for scraping your mixing bowl
the grub you’ll need:
1stick + 6 Tbsp softened, unsalted butter
3/4c packed light brown sugar
1c granulated sugar
1 1/2c flour
3c quick oats (or regular…that’s what The Colonial Dude said, anyway…)
2 eggs (room temp)
1 tsp vanilla
1 tsp baking soda
1 tsp each: ground cinnamon, ground nutmeg, ground all spice
1 tsp kosher salt
to total 2c: dried cherries, white chocolate chips, dark chocolate chips. Toss these with 1 Tbsp flour so they won’t clump up.
what you’ll do:
preheat your oven to 350F. Prepare your cookie sheet. Drink lots of coffee (especially if you’re doing this late at night, but I heartily recommend coffee at all hours of the day or night…)
1) cream together the eggs, butter, sugars, and vanilla. Mix this on med/high until completely incorporated, pale, and fluffy-ish.
2)with mixer turned down to the lowest speed (trust me here) slowly add the flour, salt, soda, and spices. Combine thoroughly. You’ll probably have to stop and scrape your mixing bowl two or three times.
3)add the oatmeal. Again, combine thoroughly, scraping your bowl as often as it takes to make sure there are no surprises in the bottom.
4)fold in the cherries and chocolate chips. (do this by hand; I used my mixer and it made the “unbalanced washing machine” THUMP THUMP THUMP…)
5) using a scooper or two spoons, place measured rounds onto your cookie sheets. You can flatten them with the bottom of a glass, or a fork, or not…I chose not. Bake for 8-12 minutes, depending on your cookie sheet, altitude, and whether or not Lindsey Lohan is in rehab. (I’m serious, you just never know…)
6)Cool them for at least ten minutes before you nosh. These little buggers hold some steam in the middle.
